HOTSELLERS Rajastani food

Taj Green Cove is all set for a Rajastani food festival from August 30 to September 3.

In the royal kitchens of Rajastan, `Khansamas' worked in the stately palaces and kept their recipes to themselves. In the desert belt of Jaisalmer, Barmer and Bikaner, cooks use a minimum of water and prefer using more of milk, buttermilk and clarified butter. A distinct feature of the Maheshwari cooking is the use of mango powder and asafoetida. Besides, each region is distinguished by its popular sweet - Mawa Kachori from Jodhpur, Alwar ka Mawa, Malpuas from Pushkar, Rasogullas from Bikaner, Ghevar from Jaipur to name a few.

Royal connection

Rajasthani food festival is brought to you by Chef Harish Dass. Chef Mohan Kanti Dass, Harish Dass' grandfather had started cooking at the age of 17 in 1897 with Rajmata Gayatri Devi's family. Harish now holds the fort at Jai Mahal Palace and he follows the same recipes of his grandfather and some innovations as well.

Don't forget to take your dancing shoes as a dance troupe from Rajastan recreate the beats of the desert in Kovalam. A puppet show and a craftsman making bangles will add a dash of colour. The buffet from 7.30 p.m. to 11 p.m. will cost Rs. 399 for a person.
